If the metal brake and gas pedal are stock on the 2012 GCSRT8?

I have the same rubber pedals that's on our 2012 Summit.

I can't find anywhere that it was optional.

I believe they should be stock, mine were not an option

yes standard...but not factory installed. the dealer is supposed to install before delivery to customer...ask your dealer.

Standard. I've seen them in the cubby holes in the back of the truck under the spare tire cover.

Correct. Mine are missing as well - They confirmed they should have fitted them so got on order.

these should be installed (some call it stock), but somehow always dealer fitted before delivery. mine were missing as well, the set was absent in the trunk. Dealer installed those from the mopar stock shop.

Contacted the Jeep dealer in Barrington, IL where we purchased our 2012 Summit and 2012 SRT8.

They told me that they haven't installed any of the metal pedals and they were going to look into changing their SRT8 pre-delivery checklist.

I'm curious . . . if they haven't been installing them on customers cars and they are delivered in the vehicle from the plant, what are they doing with them?

They have ordered my set and told me they would call me when they arrive.

So you checked the spare tire area and they were not there? If I recall correctly that was where they were when my 2012 was delivered. Dealer put them on before I could remind them.
