I've used my stockers thru the last 4 winters and am shocked that the clear coat is holding up so well (although I wash the sh$t out of them regularly

Go with the 275s and no narrower, and don't worry about your wheels, just keep them clean. I wash mine every 2-3 days in the "touchless" wash.
Narrower wheels will help a lot in the snow, the 275 is still a wide tire... but in a snow tire, they are fine.

How are the blizzacks when the roads are dry? Should they only be used with snow on the road?

They are fine as long as you are trying to roast the tires everywhere. They are very soft.
